The study aimed to evaluate consumers' perception of self-service foods' nutrition labels. This qualitative and quantitative assessment was performed with potential consumers at food services. Four food labeling formats, traditional, simplified, traffic-light, and warning, were proposed to evaluate three types of sandwiches: simple, chicken, and hamburger. Data were collected via an online survey from April to May 2020. The study included 413 subjects. The respondents preferred the traffic-light format, but there was a good understanding and acceptability of all four models. The traffic-light and warning nutrition labeling models, which showed health warnings, led to a reduction in the choice of the Simple Sandwich and the Hamburger. Most respondents (96.1%, n = 397) agreed that it is necessary to complement the information on food labels with ingredients and the number of calories per serving. Therefore, it is essential to have legislation regulating such issues. Consumers' choices improved with the increase in the information placed on the products. This research demonstrated that nutrition labels explain what exists currently and that consumers require such information. Thus, food labeling may positively influence consumers' choices.

Introdução: Devido ao fato de que muitas pessoas são intolerantes à lactose, novas propostas de preparações dietéticas com bons atributos sensoriais e isentas deste dissacarídeo são necessárias para garantir bem-estar e qualidade de vida para estes indivíduos. Objetivo: desenvolver sorvete com extrato hidrossolúvel de arroz. Método: Foram produzidos sorvetes com 50% e 100% de substituição do leite bovino por extrato hidrossolúvel de arroz em dois sabores (morango e chocolate). Os métodos para o desenvolvimento deste estudo basearam-se na análise físico-química do sorvete, bem como a análise sensorial para definir o nível de aceitação do produto e preferência por parte dos consumidores. Resultados: Os sorvetes de extrato hidrossolúvel de arroz, tanto de chocolate, como de morango obtiveram maiores teores de carboidratos e menores valores energéticos, devido ao fato de ter menor teor de proteína e lipídio, em comparação com o sorvete feito com leite bovino. Obteve-se boa aceitação, sendo que o sorvete de 50% extrato de arroz sabor morango não obteve diferença significativa do sorvete com 100% de leite de bovino, em relação à preferência. Conclusão: Conclui-se que o sorvete com extrato hidrossolúvel de arroz é um produto com boas características nutricionais e tem boa aceitação, podendo ser uma opção para pessoas intolerantes à lactose. Introduction: As there are many people with lactose intolerance, new dietary preparations with good sensory aspects and free from this disaccharide need to be proposed, which would ensure these individuals' well-being and quality of life. Purpose: To develop an ice cream made with water-soluble rice extract. Method: Ice creams were produced replacing 50% and 100% of cow milk with water-soluble rice extract, in two flavors (strawberry and chocolate). The methods for developing this study were based on the physicochemical analysis of the ice cream and the sensory analysis, to establish the degree of acceptability of the product, as well as the preference on the part of the consumers. Results: Both the chocolate and the strawberry water-soluble rice extract ice creams had higher carbohydrate content and lower energy values, due to its lower protein and lipid content in comparison with cow milk ice cream. There was good acceptability; particularly, the 50% rice extract strawberry ice cream had no significant difference to the 100% cow milk ice cream, regarding preference. Conclusion: It is concluded that the water-soluble rice extract ice cream is a product with good nutritional characteristics and good acceptability. It can be considered an alternative for people with lactose intolerance. (AU)

O objetivo deste estudo foi avaliar a composição de folhas, talos, cascas e sementes de vegetais, elaborar preparações utilizando essas partes e verificar a sua aceitabilidade. Foram selecionadas algumas frutas e hortaliças das quais foram separadas as folhas, talos, cascas e sementes. Foi analisada a composição centesimal e o teor de fenóis totais. Após, foram desenvolvidas preparações utilizando as folhas, talos, cascas e sementes, as quais foram avaliadas sensorialmente através do teste afetivo de aceitação. O teor de lipídios variou de 0,03% (talo de espinafre e talo de beterraba) a 2,27% (semente de moranga). O teor de proteínas variou de 0,51% (casca de banana) a 9,56% (semente de melão). A maioria das amostras apresentou em torno de 1% de cinzas e o teor de fibras variou de 0,72% a 16,02%. O teor mais elevado de polifenóis foi encontrado na casca da laranja (631,25mg 100g-1). Os resultados da análise sensorial demonstraram que 77% das preparações obtiveram notas acima de 5 (gostei). Conclui-se que, através da identificação da composição nutricional das partes dos alimentos, usualmente descartadas, pode-se direcionar melhor seu uso na preparação de várias receitas.


The objective of this study was to evaluate the composition of leaves, stems, bark and seeds of vegetables, prepare recipes using these parts and to verify the acceptability of them. It was selected some fruits and vegetables which were separated from leaves, stems, bark and seeds. It was analyzed the nutritional composition and total phenols. After recipes were developed using the leaves, stalks, husks and seeds, which were evaluated by sensory analysis. The fat content ranged from 0.03% (stalk of spinach and beet) to 2.27% (pumpkin seed). The protein content ranged from 0.51% (banana husk) to 9.56% (melon seed). Most samples had about 1% ash and fiber content ranged from 0.72% to 16.02%. The higher content of polyphenols was found in orange husk (631.25mg) and the lowest in the papaya seed (22.53mg). It was concluded that by identifying the nutritional composition of the portions of food usually discarded the use of these parts can be better direct in preparing various recipes, which are enriched nutritionally.
